Salt Free Mayo

I recently came across a great recipe for completely sodium free mayo from the Mother Nature Network. This recipe is not only sodium free but vegan as well. I tweaked it a little to incorporate some apple cider vinegar and of course didn’t add theĀ optional sodium. Great this about this recipeĀ is that there are no eggs, so it is completely 100% salt-free.

 1 tsp Fresh lemon juice
 1 cup Extra Virgin Olive Oil

Combine tofu, lemon juice, and apple cider vinegar together in a blender or with a wand blender for about 30 seconds or until the tofu is smooth.

While blending, slowly add in your olive oil until emulsified and the mixture thickens.

Spread and enjoy the salt-free richness of this mayo!
